Most of us love a sweet treat. They help us to celebrate life's special moments, from birthdays and anniversaries to festive holidays, milestones and simple get-togethers with family and friends. Cakes and desserts bring us together, they speak of love.

What then, for the 4.3 million people in the UK that live with diabetes, and the many more partners, parents, children and friends that share this journey with them? Not to mention the growing numbers of us that worry about the daily damage that excess sugar and carbs are having on our health?

As a keen baker, making cakes for my loved ones has always been my way of saying you're special. But when my husband and later my son were diagnosed with Type 1 diabetes - an autoimmune condition unrelated to diet - I was at a loss. All my well practised recipes became obsolete. I visited countless stores and health food shops in search of good options for diabetics, only to be disappointed by the limited range of products on offer and their patchy understanding of the condition. Products without added sugar but loaded high in carbs are no good to a diabetic!

I had to get back to the drawing board and become creative, researching and experimenting with the best alternatives for sugar, finding ways of reducing the carbohydrates, and adjusting old recipes.

From these experiences, a few tried and tested bakes have emerged which I would like to share with you.

We know that the population faces not just a diabetes problem but a sugar problem in general. With few real alternatives, many may damage their health through unchanged eating habits, unwilling to give up things which, after all, offer so much joy.

With Sweet Nothing Cakes, we hope to be part of a new wave of bakers that bring the joy, love and coming together of sweet treats, minus the sugar and excess carbs.
